Even with only 30 min lunch break you can cook quick delicious healthy meals for your self. You will be healthier, happier and more productive through out the day.
As I work and spend most of my time in my home photography studio, I have access to my kitchen everyday during the lunch break. Unless I have a lunch with a client, I cook and eat in the studio. I feel very lucky that I have a kitchen at my disposal. I know that not all of you have this option but if you do, consider treating yourself every day to a healthy delicious full of flavor lunch.
Cooking at first was a challenge for me, for over 28 years I was not a great cook and I definitely wasn’t excited about food at all. That changed when I met my hubby, Hector. He loves food, and can get so excited about eating wonderful plate full of deliciously flavours.
Apart from some really inspiring, wonderful chef’s that I follow and learn from online, Hector was my biggest inspiration to fall in love with food and with cooking. Thanks to him, now I see every meal as a wonderful opportunity for an exciting culinary adventure. Even when all I have is 5 minuets.
Every day I honor my body, and take a moment to cook for myself with great joy and excitement while keeping in mind that the quicker I can cook a healthy delicious meal the better. During the week I do not have time to cook for hours. Every day I have a lunch break of 30min up to 40 min. That’s all I have to cook and to peacefully enjoy my lunch. So finding recipes for dishes packed with flavour that can be cooked within 5, 10 min has become a passion of mine. Sometimes 5 minutes it’s all it takes to have a delicious, healthy meal that will give you that boost to have a great active day.
Today I made a Chickpea Spicy Curry in 5 min. I was so happy, I love this dish and I wanted to share this recipe with you. It was not only delicious zingy curry veggie goodness, but it also gave me a wonderful boost of happy energy. I even ended up having a little moment just to relax and enjoy my break.

Difficulty level: Easy
Time of cooking: 5 min
All you need – INGREDIENTS
1 medium size onion
1 clove of garlic
400 g tin of chickpeas
400g coconut cream
400g chopped tomatoes
½ thumb-size piece of ginger
½ fresh red chilli
3-4 tsp curry powder
1 tsp paprika powder
1 tsp cumin powder
1 tsp curcuma powder
good handful of fresh mint or coriander
juice of ½ lemon
2 tablespoons of sugar
black pepper and salt as needed, feta cheese for added flavor and decoration
HOW TO PREPARE IT:
Heat the oil on the medium heat
Cut the onion & garlic into a thin small pieces, add it to the oil
Grate the ginger into the pan. Mix it all together every time you add a new ingredient.
Add all spices
Add sugar
Chop the chilli, add it to the pan. [ If you like really spicy dishes you can leave the seeds, if you prefer softer flavour, remove the seeds before thinly slicing the chilli ]
Add the tomatoes, coconut cream and mix it all well together. Let it cook for 30 sec.
Add chickpeas
Add chopped fresh mint or coriander, depends of your preference.
Add lemon juice
Add salt and pepper if needed
Mix it all well together and let it cook for few seconds to get richer flavors.
Serve it in a bowl on top finish up with few fresh leaves, crumble small pieces of feta cheese and add few slices of fresh chili for added flavor and creative finish. A green salad on the side or half of avocado with some cherry tomatoes on the side with a slice or two of your favorite bread. Bon Appetit!
