Portions: 6 – 8
Ingredients full of Health and Magic:
- 1 tbsp coconut oil
- 1 red onion, diced
- 3 garlic cloves, grated
- 200 g mushrooms
- 2 carrots, grated
- 1 cup frozen peas
- 1 cup/can white lentils, soaked and drained
- 1 cup small orange lentils, soaked and drained
- 1 tsp rosemary, dried
- 1 tsp thyme, dried
- 2 tsp chilli flakes
- 2 tsp paprika
- 2 bay leaves
- 3 tsp tamari {gluten-free soy sauce}
- 3 tsp maple syrup
- 1 can/ cup chopped tomatoes. I used 1 can cherry tomatoes
- 1 small can tomato puree | 2 tbsp
- Salt and pepper to taste
- 1 large potato. I used 4 – 6 smaller potatoes
- 125 g grated cheese, emental works well with this recipe.
Magic Love spell:
- Start with dicing the onion. Chop the mushrooms and grate the carrots.
- Heat a pot with coconut oil + onion + garlic + mushrooms + carrots and fry together for 5 -7 min {till the mushrooms get golden and beautiful}.
- Now add in the peas + lentils + tomatoes + all herbs + tamari + maple syrup, and stir.
- Leave to simmer.
- Meanwhile thinly slice the potatoes and cook in a boiling salted water for +/- 10 min or till soft and cooked
- Drain potatoes.
- Place the lentil mix into an oven safe pot and place the potatoes on top, and top it all with grated cheese.
- Bake at 200°C (fan) for 25 min. And voila, your dish is ready to serve.
